 KATE'S KITCHEN
 Craving Comfort Food?

Italian Meatloaf
ITALIAN MEATLOAF
2 T. extra-virgin olive oil
1 red pepper, seeded, small diced
1 onion, diced
2 tsp. chopped garlic
1 lb. ground beef
2 eggs
3/4 C. bread crumbs
1 C. grated Parmesan
1 T. Worcestershire sauce
1 T. balsamic vinegar
2 T. chopped basil leaves
1 T. chopped parsley leaves
1 tsp. salt
1/2 tsp. black pepper
1 C. marinara sauce

Preheat oven to 350 degrees F.

Heat 1 tablespoon of the olive oil in a medium saute pan over medium heat and add the peppers, onions and garlic. Saute until just soft, remove to a plate and cool.

When the peppers and onions are cool, combine all of the remaining ingredients together except for the marinara. Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.

Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.


 


THE LAST WORD

A busy summer season leads to an even busier fall for our construction department. We continue to build and don't see any end in sight if the weather cooperates. Our work load is heathy as we welcome many new pool customers.

In addition, the spa division continues to grow and as we begin our 7th year in business we are trying to have controlled growth to satisfy the continued needs of all our customers. We continue to self monitor our service department and explore areas that do not measure up to our customer's expectations. We continue to educate our staff with quality, state of the art training. This month Ed Dormer, our Arctic Spas service manager, and I are off to Edmonton, Canada for a week long comprehensive training to ensure we understand all the "ins" and "outs" of our product.
