KATE'S KITCHEN
Easy Orzo Salad
Ingredients
1 lb. orzo
2 T. Dijon mustard
1/2 C. olive oil
2 lemons, juiced
Kosher salt and freshly ground black pepper
2 C. halved red and yellow cherry tomatoes
1 C. slivered almonds, toasted
1 small red onion, finely chopped
2 green onions, thinly sliced (white and green parts)
2 T. fresh basil leaves
2 T. fresh mint leaves
5 oz. crumbled feta cheese
Directions
Bring a large pot of salted water to a boil over medium heat. Add the orzo and cook until tender yet still firm, about 8 minutes. Drain into a colander and let cool.
Whisk together the Dijon, olive oil, and lemon juice in a large serving bowl. Season with salt and pepper, to taste. Add the cooled orzo, cherry tomatoes, almonds, red onion, green onions, basil, mint, and feta. Toss together and taste for seasoning. Add salt and pepper, if needed. Serve.
Tips:
If you plan to make the salad ahead of time consider waiting to add the feta cheese until you are ready to serve.
Top with marinated grilled shrimp or chicken for extra goodness.

THE LAST WORD
I can hardly believe the July 4th holiday weekend is already here. Summer is flying by very quickly. We have already finished a large number of pools for families to enjoy and we are eager to complete many more on our schedule this year. There is still lots of swim season left and we hope you are making the most of the season.
Thank you to our many supportive customers, family and friends to came out to see us at the 2010 Parade of Homes where we were on display. We were proud to have worked with Costello Builders who were awarded the Fulton Award and Best Exteriors, among numerous other categories. The exposure has been fabulous.
