 BIA Mixer Well Attended

Thank you to all our guests who attending the Building Industry Association Mixer Luncheon May 5, 2010. It was well attended by approximately 60 people who all enjoyed a tasty cookout.

Integrity Pools & Spas joined the BIA almost four years ago in an effort to network with quality builders and contractors in our area. We continue to be in search of companies who strive to provide the same quality and excellence we offer everyday!

 


 KATE'S KITCHEN
 Soy Sauce-Grilled Shrimp with Spinach Salad

Soy Sauce Grilled Shrip INGREDIENTS:

Base:
1/4 C soy sauce
2 limes, juiced
2 tsp honey
2-inch piece fresh ginger, finely grated
4 cloves garlic, finely chopped
1/4 C canola oil, plus more for brushing

For Soy Sauce-Grilled Shrimp with Spinach Salad:
12 oz large (21-24) shrimp, peeled, tail-on, and deveined
1/2 recipe base
Kosher salt and freshly ground black pepper

Spinach Salad:
1/4 C rice vinegar
2 T soy sauce
2 T canola oil
1 T toasted sesame oil
2 green onions, thinly sliced
1/4 C chopped fresh cilantro leaves
8 oz baby spinach
1/2 C chopped salted peanuts


DIRECTIONS:

For Soy-Sauce Grilled Shrimp:
Whisk the soy, lime juice, honey, ginger, garlic and canola oil in a medium bowl until combined. Transfer half to a food processor fitted with the blade attachment and set aside. Add the shrimp to the marinade in the bowl and toss to coat. Cover and refrigerate for 15 minutes.

While the shrimp marinates, whisk together the rice vinegar, soy sauce, canola and sesame oils, scallion and cilantro in a small bowl.

Heat the grill to high. Remove the shrimp from the marinade, brush with canola oil, and season with salt and pepper. Skewer the shrimp and grill for 2 to 3 minutes per side, until just cooked through.

Toss the spinach with some of the vinaigrette and mound in the center of a serving platter. Arrange shrimp around spinach and spoon over more of the dressing. Scatter the peanuts over the salad and shrimp.

THE LAST WORD

I hope you are enjoying a relaxing and most beautiful Memorial Day weekend with family and friends. Most months, The Last Word is filled with thoughts of you, our customer. I continue to thank you for your trust and loyalty. This month I want to give a huge thank you to our Service Department for pulling together to get our pool customers open and ready for the unofficial start to summer. They have worked hard for the last two months putting in long and tireless hours to make sure pools are open and working properly. They desire a round of applause.

This leads into our retail staff who have been working with water chemistry issues for customers to ensure water is balanced and safe for family and friends to enjoy. Our staff have done a great job with the retail store developing procedures and putting systems in place for our new location so we may be efficient and mindful of our customer's needs.

I would also like to thank our Spa Division for all their dedication and commitment. While in our new location we have had our best Arctic Spas sales quota yet. They have been busy preparing spas for delivery and getting the job done.

So, thank you to my staff for your dedication and commitment to your career and our customers. Your conscientious and collaborative efforts do not go unnoticed. I am lucky to have this great team.
